Homemade Chicken Nuggets

These are my grown up version of chicken nuggets, but I promise the kids will like them too! They are so good that you don't even need a sauce to dip them in! Serve them up for dinner or make them as an appetizer at your next gathering. Just make sure you make a lot of them, they are always a big hit! Ingredients:
2 Boneless, Skinless Chicken Breasts
6 tbsp of Butter
1/2 cup dried, Italian Seasoned Bread Crumbs
1/4 cup unseasoned, Panko Bread Crumbs
1/4 cup Parmesan Cheese
1/2 tsp Salt
1/4 tsp Garlic Powder
1/4 tsp dried, Italian Seasoning

Directions:
Preheat your oven to 400 degrees. Cut your chicken into 1/2" cubes. Melt your butter. I just put the butter in a glass pie plate & microwave it at 30 second intervals until it is melted. Make sure to take it out & swirl the plate around to mix it together.
In another dish, combine the dry ingredients: breads crumbs (both kinds), Parmesan cheese, & seasonings.
Set up a little 'assembly line'. Chicken, butter, bread crumb mixture, then sheet pan.
Dip the chicken, in the butter, then into the breading, then place on the sheet pan. I do a couple of nuggets at a time, until they are all coated well.
Bake at 400 degrees for 15 minutes, or until fully cooked.
Our version of a 'Happy Meal'. Homemade chicken nuggets, homemade french fries & corn on the cobb! :)
